In Brda, the microclimatic location for growing persimmons is very favorable. Peel a squash, grate it and dry it. Drying takes about two weeks, at a temperature below 40 degrees Celsius. The fruits retain their exceptional juiciness and have a wonderful taste. During the drying process, the persimmons ripen to the end, the characteristic bitterness disappears, and the fruits are velvety covered with a white sprinkle of sugar.
