Pumpkin seed oil is a culinary specialty of Slovenia. It is obtained from pumpkin seeds, mostly from the genus Cucurbita pepo var. styrriaca. Pumpkin seed oil, like any oil, contains mainly triglycerides and phytosterols, as well as proteins, minerals, unsaturated fatty acids and many vitamins. Chlorophyll-like substances give it its characteristic green-red to dark brown color. It is used in the preparation of salads or as a spice in cooking.
