Pumpkin seed oil, like any oil, contains mainly triglycerides and phytosterols, as well as proteins, minerals, unsaturated fatty acids and many vitamins. Chlorophyll-like substances give it its characteristic green-red to dark brown color. It is used in the preparation of salads or as a spice in cooking.
